cooking and losing weight do not belong in the same resolution

It’s been a phenomenal day in the kitchen. I have yet to burn anything and have produced more than one edible item. Stellar. This is both good and bad. Good since I have tummy-friendly goodies and bad since I have goodies. So much for trying to lose weight. Cooking more and trying to lose weight are mutually exclusive goals and should never be combined into a resolution. Lesson learned.

gluten-free cranberry-orange scones

1 cup oat flour
1/2 cup almond flour
1/3 cup pure cane sugar
1/4 cup rice flour
1/4 cup potato starch
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp xanthan gum
1/2 tsp salt

6 tbsp cold butter

1 cup dried cranberries
2 tsp orange zest

1/2 cup egg beaters
1/3 cup milk
1 tsp pure vanilla extract

1. Preheat oven to 400
2. Combine dry ingredients.
3. Cut in butter.
4. Stir in fruit. I had dried cherries in the pantry as well so I threw in a handful of those as well.
5. Whisk eggs, milk and vanilla until frothy and stir into dry ingredients. Dough will be very gooey and sticky.
6. Drop onto cookie sheet or scone pan. Let dough rest for 15 minutes before baking.
7. Bake at 400° for 15 minutes until golden brown.
8. Cool and serve. Husband likes them with a little orange glaze on top. Just heat 2 tbsp butter, 1/4 cup orange juice, 2 cups powdered sugar in saucepan. Boil until thickened and drizzle over scones. Let cool.
