husband runs, i bake


Being gluten-free is kinda rough. Especially when your favorite foods are Oreos, pancakes, and blueberry muffins AND baking is your stress-relief. My husband runs, I bake. We are both very happy people and have the respective waistlines to prove it. I’ve tried for months to find a decent blueberry muffin but everything turns out like a rock and has that awkward gritty taste aftertaste. Gross. Not even worth eating. I’ve looked at just about every cookbook on the market but they’re mostly dairy-free, nut-free, egg-free, gluten-free, fun-free, and taste-free. I only have a gluten allergy so I wanted something that was still made with fresh products I could pronounce. Like milk, eggs, and brown sugar. After a long week, I needed a little time cheating on my husband with my Kitchen-Aid. Thankfully last time I went to the store, I bought about 8 lbs of blueberries so I was all set. By the second batch, I not only had something edible, I also had something delicious. Husband was fooled and figured I cheated and they weren’t gluten-free. I’m so sneaky…


blueberry oat muffins

1 cup rolled oats
1 cup oat flour
1/3 cup almond flour
1/4 cup rice flour
1/4 cup potato starch
1 tsp baking soda
1 tsp cream of tartar
1/2 tsp salt
1/2 tsp xanthan gum
1/2 cup pure cane sugar
1/2 cup brown sugar

1 cup milk
1/2 cup egg beaters
1 tsp vanilla
splash (maybe 1/2 tsp?) apple cider vinegar
2 tbsp canola oil

1 cup (or more) fresh blueberries, rinsed and drained
1 tsp (or more) orange zest

2 tbsp butter, melted
1/3 cup rolled oats
2 tbsp brown sugar
2 tbsp pure cane sugar
1 tbsp cinnamon

1. Preheat oven to 375
2. Combine dry ingredients in mixer.
3. Whisk wet ingredients together until frothy and add to dry ingredients. Combine thoroughly. (I noticed my mixture was a little too runny for my taste so I added a bit more oat flour.)
4. Stir in blueberries and orange zest.
5. Fill muffin cups with about 1/3 cup of batter.
6. Combine topping ingredients and sprinkle on top of muffins.
7. Bake at 375° for 20 minutes.
8. Feed to husband and then do happy dance when he approves.

add frothy wet ingredients, then stir in blueberries and orange zest.



fill muffin cups. Mine take about 1/3 C of batter.


combine melted butter, oatmeal, sugars, and cinnamon for crumb topping.


sprinkle on top and bake at 375° for 20 minutes
